There’s something incredibly satisfying about making your own bacon jam. The rich, savory-sweet spread pairs perfectly with so many dishes. Today, I’m excited to share a version that delivers a well-balanced flavor profile.


  • 1 pound bacon, diced
  • 4 cloves garlic, minced
  • 1/2 cup brown sugar
  • 1/4 cup apple cider vinegar
  • 1/4 cup maple syrup
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper (optional, for a bit of heat)


  1. Cook the Bacon: In a large skillet, cook the diced bacon over medium heat until crispy. Remove the bacon with a slotted spoon and drain on paper towels. Pour off all but 1 tablespoon of the bacon fat from the skillet.
  2. Sauté the Garlic: Add the minced garlic to the skillet and sauté until fragrant, about 1 minute.
  3. Combine Ingredients: Return the bacon to the skillet and add the brown sugar, apple cider vinegar, maple syrup, smoked paprika, black pepper, and cayenne pepper (if using). Stir well to combine.
  4. Simmer: Reduce the heat to low and let the mixture simmer, stirring occasionally, until it thickens and becomes jam-like in consistency, about 30-40 minutes.
  5. Cool and Store: Allow the bacon jam to cool slightly before transferring it to a jar. Store in the refrigerator for up to two weeks.
